Vinification: the grapes are pressed without crushing to maintain a good acid balance and limit the extraction of colour from the grape’s red skins. Fermentation is carried out at controlled temperatures of around 18°C in steel tanks; the resulting wine remains on its fine lees until tirage takes place in the spring following the harvest. Thereafter, the sparkling wine undergoes 24-30 months’ elevage prior to disgorgement.
Tasting notes: brilliant straw yellow colour with a fine and persistent bead.The bouquet is intense and fruity with notes of white-fleshed stone fruit, flowers and a slight suggestion of bread crust. On the palate, it is crisp, dry, enveloping with a long finish, confirming its fruity nose.
Pairings: ideal as an aperitif and as an accompaniment to fish dishes or white meat.
