Vinification: alcoholic fermentation in steel tanks at 28°-30° C, with 15 days’ maceration followed by both malolactic fermentation and then elevage in wood, with periodic decanting over the next 18 months.
Ageing: in wood for about 18 months and a further 12 months’ bottle-ageing; ageing potential easily reaches ten years.

Tasting notes: 
Ruby-red, flecked with garnet highlights; intensely ethereal nose with toasted sensations and small red fruit, liquorice and vanilla.
On the palate, dry, balanced, warm and enveloping; tannins are silky, not astringent. Full-bodied with a long and persistent finish, the aftertaste is intense with retronasal sensations of fruit in alcohol, violet and rose petal.
Pairings: excellent with roasts, game, braised meat and mature cheeses.
